Vegan Berry Crumble Bars

Ingredients
  

For the Berry Filling
  • 2 cups mixed berries (blueberries, raspberries, strawberries) Fresh or frozen
  • 1 tablespoon maple syrup
  • 1 dash cinnamon
For the Crumble Base
  • 1 cup rolled oats
  • 1/2 cup almond flour Can substitute with oat flour for nut-free version
  • 1/4 cup maple syrup Adjust based on the sweetness of the berries
  • 1/4 cup coconut oil (melted)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup chopped nuts (optional) Such as walnuts or pecans

Method
 

Preheat Oven
  1. Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish with coconut oil or line with parchment paper.
Prepare Berry Filling
  1. In a medium bowl, combine the mixed berries, 1 tablespoon of maple syrup, and a dash of cinnamon. Gently mix to coat the berries.
Make the Crumble Base
  1. In a large bowl, mix the rolled oats, almond flour, remaining maple syrup, melted coconut oil, vanilla extract, salt, and cinnamon. Combine until crumbly.
Layer the Ingredients
  1. Press about two-thirds of the crumble mixture into the bottom of the greased baking dish to form the base. Pour the berry mixture over, then sprinkle the remaining crumble on top.
Bake
  1. Bake for 25 minutes or until the crumble is golden brown and the berries are bubbling.
Cool and Serve
  1. Let cool in the baking dish for at least 15 minutes before slicing into squares. Enjoy warm or at room temperature.

Notes

Can be stored in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze in a single layer and microwave when ready to eat.
