Preparation
- Preheat your oven to 350°F (180°C) for even cooking.
- Grease a 9x9-inch baking dish with coconut oil or line it with parchment paper.
- In a large bowl, combine rolled oats, flour, brown sugar, salt, and cinnamon, stirring until mixed.
- Pour in melted coconut oil and maple syrup, adding vanilla extract; mix until crumbly. Reserve about one cup for topping.
- In another bowl, toss mixed berries with a tablespoon of flour to coat them lightly.
Assembly and Baking
- Spread remaining oat mixture in the bottom of the prepared baking dish.
- Gently pour berries on top and spread them out evenly.
- Sprinkle reserved crumbly mixture over the top.
- Bake for about 25-30 minutes until the top is golden brown and berries are bubbling.
Finishing Touches
- Remove from oven and let bars cool in the pan before cutting into squares.
Notes
For best results, cool completely before cutting. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Reheat in the microwave or oven as needed.
