Ingredients

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/2 cup heavy cream
  • 1 tablespoon vanilla extract
  • 1 large egg
  • 1/2 cup vanilla beans or vanilla powder (optional)

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk until well combined.
  3. Add the chilled, cubed butter to the flour mixture and mix until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the heavy cream, vanilla extract, and egg until blended.
  5. Gradually pour the wet ingredients into the dry mixture, folding gently until just combined. If using, fold in vanilla beans or powder.
  6. Transfer the dough to a lightly floured surface and knead gently two to three times until it comes together. Pat into a 1-inch thick circle and cut into wedges.
Baking
  1. Transfer the scones onto the prepared baking sheet and bake for 15-20 minutes or until golden brown.
  2. Allow the scones to cool slightly before serving, best enjoyed warm with whipped cream or jam.

Notes

Tips for perfect scones: use chilled butter, avoid overmixing, experiment with toppings, and ensure all ingredients are fresh. Store leftovers in an airtight container at room temperature for up to 2-3 days.
