Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a large mixing bowl, cream together the softened unsalted butter and sugar until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix just until combined.
- Gently fold in the sliced plums until evenly distributed in the batter.
- Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For perfect results, ensure butter is at room temperature for creaming, and avoid overmixing the batter after adding flour. Store in an airtight container for up to 3 days or freeze for up to 2 months.
