Preparation
- Preheat your oven to 325°F (160°C).
- In a medium-sized bowl, combine the graham cracker crumbs and melted unsalted butter. Mix until well combined. Press this mixture into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then set aside to cool.
- In a large mixing bowl, beat together the softened cream cheese and sugar until smooth and creamy.
- Add the heavy cream, eggs, vanilla extract, and cornstarch to the cream cheese mixture. Beat until well mixed and creamy.
- Pour the creamy mixture over the baked graham cracker crust and smooth the top with a spatula.
- Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven, crack the door, and allow the cheesecake to cool slowly inside for about an hour.
- Once cooled, refrigerate for at least 4 hours, preferably overnight.
- Once chilled, release the springform pan and slice the cheesecake. Top it with your favorite toppings and enjoy!
