Ingredients

Main Ingredients
  • 2 cups fresh blueberries
  • 1 cup sugar Can reduce if less sweetness is desired.
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 packet pectin Ensure halal-certified.

Method

Preparation
  1. Rinse the blueberries under cool water, and remove any stems. Set to the side.
Cooking
  1. In a medium-sized pot over medium heat, combine the blueberries and lemon juice. Stir gently until the blueberries begin to release their juices, about 5 minutes.
  2. Stir in the sugar and pectin until well combined. Bring the mixture to a rolling boil that cannot be stirred down. Keep it boiling for 1-2 minutes.
  3. Remove the pot from heat and stir in the vanilla extract.
  4. Carefully pour the hot jam into sterilized jars, filling them to about 1/4 inch from the top. Seal the jars while the jam is still hot.
  5. Let the jam cool to room temperature before placing it in the refrigerator.

Notes

Store jam in the refrigerator for up to 3 weeks, or freeze for up to 6 months in an airtight container. Thaw in the fridge overnight before use.
