Preparation
- Rinse the blueberries under cool water, and remove any stems. Set to the side.
Cooking
- In a medium-sized pot over medium heat, combine the blueberries and lemon juice. Stir gently until the blueberries begin to release their juices, about 5 minutes.
- Stir in the sugar and pectin until well combined. Bring the mixture to a rolling boil that cannot be stirred down. Keep it boiling for 1-2 minutes.
- Remove the pot from heat and stir in the vanilla extract.
- Carefully pour the hot jam into sterilized jars, filling them to about 1/4 inch from the top. Seal the jars while the jam is still hot.
- Let the jam cool to room temperature before placing it in the refrigerator.
Notes
Store jam in the refrigerator for up to 3 weeks, or freeze for up to 6 months in an airtight container. Thaw in the fridge overnight before use.
