  • 1 cup quinoa Rinse under cold water before cooking.
  • 2 cups milk (or plant-based alternative)
  • 1 unit vanilla bean (split and scraped) or 1 tsp vanilla extract Vanilla extract can be used if vanilla bean is not available.
  • 2 tablespoons honey or maple syrup (optional) Optional for sweetness.
  • 1 pinch salt
Toppings
  • Fresh fruit for topping (e.g., berries, banana) Add according to preference.
  • Nuts or seeds for topping (optional) Add for additional crunch.

Method
 

Preparation
  1. Rinse the quinoa under cold water to remove its natural coating, called saponin.
  2. In a medium-sized pot, combine the rinsed quinoa, milk, scraped vanilla bean seeds (or vanilla extract), a pinch of salt, and honey or maple syrup if preferred.
Cooking
  1. Bring the mixture to a boil over medium heat.
  2. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 15 minutes, or until the quinoa has absorbed the liquid and is fluffy.
  3. Remove the pot from heat and let it sit for 5 minutes with the lid on.
  4. Fluff the quinoa with a fork, and serve warm with your choice of toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Add a splash of milk before reheating. Can freeze for up to 2 months.
