  • 2 large egg whites Use fresh eggs for best results.
  • 1 cup sugar Adds sweetness.
  • 2 cups chocolate chips Feel free to mix different types of chocolate.
  • 1 teaspoon vanilla extract Enhances flavor.
  • 1/2 cup chopped nuts (optional) Adds a crunchy texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
  3. Gradually add the sugar while continuing to beat the egg whites until you achieve stiff peaks.
  4. Gently fold in the chocolate chips, vanilla extract, and nuts (if using) without deflating the mixture.
  5. Use a spoon or cookie scoop to drop spoonfuls of the mixture onto a lined baking sheet, leaving about an inch of space between each.
Baking
  1. Place the tray in the preheated oven and bake for 12-15 minutes.
  2. Turn off the oven, close the door, and leave the cookies inside for at least 2-3 hours or overnight to ‘set’.

  1. Retrieve your cookies after the cooling time and enjoy their delightful texture!

Notes

Store leftovers in an airtight container at room temperature for up to 4-5 days. For longer storage, freeze them layered between parchment paper. They can be stored in the freezer for up to three months. Reheat gently if desired.
