Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
- Gradually add the sugar while continuing to beat the egg whites until you achieve stiff peaks.
- Gently fold in the chocolate chips, vanilla extract, and nuts (if using) without deflating the mixture.
- Use a spoon or cookie scoop to drop spoonfuls of the mixture onto a lined baking sheet, leaving about an inch of space between each.
Baking
- Place the tray in the preheated oven and bake for 12-15 minutes.
- Turn off the oven, close the door, and leave the cookies inside for at least 2-3 hours or overnight to ‘set’.

- Retrieve your cookies after the cooling time and enjoy their delightful texture!
Notes
Store leftovers in an airtight container at room temperature for up to 4-5 days. For longer storage, freeze them layered between parchment paper. They can be stored in the freezer for up to three months. Reheat gently if desired.
