Preparation
- Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
- In a mixing bowl, beat together the softened cream cheese, sugar, vanilla extract, and egg yolk until smooth. Set aside.
- In another bowl, mix the flour, baking soda, and salt. In a separate large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the vanilla and egg until well combined.
- Gradually mix in the dry ingredients until just combined, then fold in the chocolate chips.
Assembly
- Take a tablespoon of cookie dough and flatten it in the palm of your hand.
- Place about a teaspoon of the cheesecake filling in the center, then gently fold the cookie dough back over to enclose the filling.
- Roll it into a ball and place it on the prepared baking sheet. Repeat this process with the remaining dough and filling.
Baking
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look a bit soft; that’s perfect!
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Make sure the cream cheese and butter are at room temperature for easier mixing and a smoother texture. Don't overmix the dough to keep the cookies tender. Consider adding lemon zest to the filling or using white chocolate chips for a unique flavor.
