Ingredients
  

For the Cookie Dough
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Ensure at room temperature
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar, packed
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1 cup chocolate chips
For the Cheesecake Filling
  • 6 oz cream cheese, softened Ensure at room temperature
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg yolk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a mixing bowl, beat together the softened cream cheese, sugar, vanilla extract, and egg yolk until smooth. Set aside.
  3. In another bowl, mix the flour, baking soda, and salt. In a separate large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the vanilla and egg until well combined.
  4. Gradually mix in the dry ingredients until just combined, then fold in the chocolate chips.
Assembly
  1. Take a tablespoon of cookie dough and flatten it in the palm of your hand.
  2. Place about a teaspoon of the cheesecake filling in the center, then gently fold the cookie dough back over to enclose the filling.
  3. Roll it into a ball and place it on the prepared baking sheet. Repeat this process with the remaining dough and filling.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look a bit soft; that’s perfect!
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Make sure the cream cheese and butter are at room temperature for easier mixing and a smoother texture. Don't overmix the dough to keep the cookies tender. Consider adding lemon zest to the filling or using white chocolate chips for a unique flavor.
