Method
 

Preparation
  1. Start by draining the chickpeas and rinsing them under cold water to remove excess salt and any canned flavor.
  2. Halve the cherry tomatoes, dice the cucumber, and chop the red onion and parsley.
Mixing
  1. In a large bowl, combine the chickpeas, tomatoes, cucumber, onion, and parsley.
  2. Drizzle the olive oil and lemon juice over the top, and season with salt and pepper to taste.
  3. Gently toss everything together until well combined.

  1. Serve immediately or let it sit for a few minutes to allow flavors to meld.

Notes

For best freshness, add olive oil and lemon juice just before serving. Store in an airtight container for 3-5 days in the fridge, best enjoyed cold.
