  • 2 cups cooked chicken, shredded Rotisserie chicken can be used for convenience.
  • 8 oz spaghetti Cook according to package instructions.
  • 10.5 oz can cream of mushroom soup
  • 10 oz can diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese Reserve some for topping.
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Optional: chopped bell peppers, fresh parsley for garnish

Method
 

Preparation
  1. Cook the spaghetti according to package instructions. Drain once cooked and set aside.
  2. In a large saucepan over medium heat, combine the cream of mushroom soup, diced tomatoes, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Stir in the shredded chicken into the sauce and warm through for approximately 5 minutes.
  4. Add the cooked spaghetti to the saucepan and gently mix until the noodles are well coated with the sauce.
  5. Stir in the shredded cheddar cheese, reserving some for topping later. Cook for an additional 2–3 minutes until the cheese is melted and everything is heated through.
  6. Scoop the spaghetti into bowls, sprinkle with any remaining cheese and fresh parsley, and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 3 months; reheat with a splash of chicken broth or water.
