  • 4 cups cubed bread (preferably stale French or brioche) Use day-old bread for the best texture.
  • 1 cup ube puree Can be found at Asian markets or made at home.
  • 2 cups whole milk Use full-fat for creaminess.
  • 3 large eggs
  • 1/2 cup granulated sugar Adjust sweetness to taste.
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/4 cup melted butter Adds richness and flavor.
Optional Toppings
  • chopped nuts For added texture.
  • cinnamon Can be sprinkled on top for flavor.
  • whipped cream To serve alongside.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. In a bowl, mix the eggs with the sugar until well combined.
  3. Add the milk, ube puree, vanilla extract, and salt. Whisk until smooth.
  4. Gently fold in the cubed bread, ensuring each piece is thoroughly soaked by the custard mixture. Let it sit for about 10 minutes.
Baking
  1. Pour the mixture into the greased baking dish and drizzle melted butter over the top.
  2. Bake for 45-55 minutes or until the top is golden brown and a knife inserted comes out clean.
  3. Let it cool for at least 15 minutes before serving.

Notes

For best results, use stale bread and allow the mixture to rest before baking. Store leftovers in the refrigerator for up to 3 days, or freeze for a month.
