Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
For the Tzatziki Sauce
  • 1 cup plain yogurt (Greek or regular)
  • 1 medium cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill or mint, chopped
  • Salt and pepper to taste

Method
 

Marinating the Chicken
  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Add the chicken breasts and let marinate for at least 15 minutes (or up to overnight for more flavor).
Preparing the Tzatziki Sauce
  1. In a separate bowl, mix together yogurt, grated cucumber, minced garlic, olive oil, and fresh herbs.
  2. Season with salt and pepper to taste. Set aside in the refrigerator to chill.
Cooking the Chicken
  1. Preheat a grill or skillet over medium-high heat.
  2. Once hot, add the marinated chicken and cook for about 6-7 minutes on each side, or until fully cooked through and no longer pink in the middle.
Serving
  1. Slice the grilled chicken and serve it topped with the tzatziki sauce.

Notes

To ensure your Tzatziki Chicken is a hit, marinate longer for more flavor. Squeeze grated cucumber well, and do not skip on fresh herbs.
