  • 1 cup sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup plums, pitted and sliced

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, ensuring each is well incorporated. Add vanilla extract.
  4. In a separate bowl, mix the flour, baking powder, and salt. Gradually sift these into the wet ingredients and blend until combined.
  5. Gently fold in the sliced plums until evenly distributed.
Baking
  1. Pour the batter into the prepared pan, smoothing the top. Bake for 40-45 minutes or until a toothpick comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Serving
  1. Slice and serve with a dusting of powdered sugar on top.

Notes

Consider substituting plums with other fruits like peaches or nectarines if not in season. For added flavor, a teaspoon of almond extract can enhance the taste. Store leftovers tightly wrapped at room temperature for up to 3-4 days, or freeze for up to 3 months.
