Preparation
  1. In a large pot, heat a splash of oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until they soften, then stir in your minced garlic and cook for another minute until fragrant.
  2. Stir in the rinsed wild rice and allow it to mingle with the vegetables for a minute.
  3. Pour in the chicken broth, dried thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes, or until the wild rice is tender.
  4. Stir in the shredded turkey and heavy cream. Give it a good mix, allowing the flavors to combine for an additional 5-10 minutes. Adjust seasoning if necessary.
  5. Drizzle with a bit of fresh parsley to add a pop of color and flavor. Serve hot.

Notes

For substitutions, use other cooked poultry like chicken if turkey isn’t available. For a dairy-free option, substitute heavy cream with coconut milk or a plant-based creamer. Ensure wild rice is rinsed thoroughly to remove excess starch, and avoid overcooking the rice to maintain a good texture.
