Preparation
- In a large pot, heat a splash of oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until they soften, then stir in your minced garlic and cook for another minute until fragrant.
- Stir in the rinsed wild rice and allow it to mingle with the vegetables for a minute.
- Pour in the chicken broth, dried thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes, or until the wild rice is tender.
- Stir in the shredded turkey and heavy cream. Give it a good mix, allowing the flavors to combine for an additional 5-10 minutes. Adjust seasoning if necessary.
- Drizzle with a bit of fresh parsley to add a pop of color and flavor. Serve hot.
Notes
For substitutions, use other cooked poultry like chicken if turkey isn’t available. For a dairy-free option, substitute heavy cream with coconut milk or a plant-based creamer. Ensure wild rice is rinsed thoroughly to remove excess starch, and avoid overcooking the rice to maintain a good texture.
