  • 1 cup cooked rice Use white, brown, or jasmine rice.
  • 1 lb turkey breast, cooked and diced Use leftover turkey or cook fresh turkey breast.
  • 1 cup broccoli florets Fresh or frozen broccoli can be used.
  • 1 piece bell pepper, diced Any color of bell pepper works.
  • 2 tablespoons soy sauce Adjust to taste.
  • 1 tablespoon olive oil For sautéing the turkey and veggies.
  • to taste salt and pepper Use as per your preference.

Preparation
  1. Start by cooking your rice according to package instructions.
  2. In a large skillet, heat the olive oil over medium heat.
Cooking
  1. Add the cooked and diced turkey breast to the skillet and sauté for about 3-4 minutes until heated through and slightly browned.
  2. Toss in the broccoli florets and diced bell pepper, cooking for an additional 5-7 minutes until the vegetables are tender but still crunchy.
  3. Pour the soy sauce over the turkey and vegetables, adding salt and pepper to taste. Mix well and let cook for another 1-2 minutes.
Assembly
  1. Start with a scoop of rice in a bowl, pile on the turkey and vegetable mixture, and garnish with toppings like sesame seeds or green onions.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Reheat in the microwave or stovetop with a splash of water.
