  • 2 cups crushed pineapple, drained Make sure to drain the pineapple for optimal texture.
Crust and Topping Ingredients

  • 1 cup oats
  • 1/2 cup brown sugar Can be substituted with coconut sugar.
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a square baking dish (8x8 inches works perfectly) or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the all-purpose flour, oats, brown sugar, granulated sugar, baking powder, and salt. Mix these dry ingredients until well combined.
  3. Pour in the melted butter and vanilla extract. Stir until the mixture is crumbly but holds together when pressed.
  4. Take about two-thirds of the crumble mixture and press it evenly into the bottom of your prepared baking dish to form the base.
  5. Spread the drained crushed pineapple evenly over the crust. Sprinkle the remaining crumble mixture over the top of the pineapple layer.
Baking
  1. Place the dish in the preheated oven and bake for about 30 minutes, or until the top is golden brown.
Serving
  1. Once baked, remove from the oven and allow it to cool completely in the dish before slicing into bars. You can serve these bars warm or at room temperature.
