Ingredients
  

For the Cake
  • 2 cups mixed berries (strawberries, blueberries, raspberries) Berries should be washed and hulled (for strawberries).
  • 1 cup heavy cream Ensure it's cold for whipping.
  • 1/2 cup granulated sugar Add to the cream while whipping.
  • 1 teaspoon vanilla extract
  • 1 package graham crackers (or cookies of your choice)
  • to taste Fresh mint leaves for garnish (optional) For garnish before serving.

Method
 

Preparation
  1. Slice the strawberries in half and mix them with the blueberries and raspberries in a bowl. Set aside.
  2. In a mixing bowl, combine the heavy cream, sugar, and vanilla extract. Use an electric mixer to whip until it forms stiff peaks.
Assembly
  1. In a rectangular dish, start layering. Begin with a layer of graham crackers, followed by a layer of the whipped cream mixture, then add a layer of the mixed berries. Repeat until all ingredients are used, finishing with a layer of whipped cream on top.
Chilling
  1. Cover the dish with plastic wrap and refrigerate for at least four hours—preferably overnight.
Serving
  1. Garnish with additional berries and fresh mint leaves before serving.

Notes

For substitutions, other fruits like peaches or mangoes can be used. Ensure heavy cream is cold before whipping, and avoid overwhipping to prevent graininess. The cake is best enjoyed cold.
