  • 4 pieces flour tortillas
  • 6 pieces eggs
  • 1 cup milk
  • 1 cup shredded cheese (any blend you prefer) e.g., mozzarella, cheddar, pepper jack
  • 1 cup chopped vegetables (e.g., bell peppers, onions, spinach) chop in advance for easier assembly
  • to taste Salt and pepper
  • 1/2 cup cooked halal sausage (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs and milk until well combined. Add in salt and pepper to taste.
  3. Lay out the tortillas on a clean surface. Cut each tortilla in half, creating semi-circles, and arrange them in a greased 9x13-inch baking dish.
  4. Evenly distribute the chopped vegetables over the tortillas, followed by the shredded cheese. If using halal sausage, sprinkle that on top too.
  5. Carefully pour the egg mixture evenly over the tortillas, ensuring every corner is covered.
Baking
  1. Place your dish in the preheated oven and bake for 30-35 minutes, or until the eggs are set and a golden crust forms on top.
  2. Remove from the oven and let it cool for a few minutes. Slice into squares and serve warm.

Notes

Tips: Use any type of cheese you prefer. Swap out vegetables as desired for freshness. Opt for thin flour tortillas to avoid sogginess.
