  • 1 cup milk
  • 1 cup shredded cheese any type of cheese can be used; ensure it's halal
  • 1 cup diced vegetables (e.g., bell peppers, onions, tomatoes) can be customized based on preference

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with cooking spray or oil to prevent sticking.
  3. Slice the tortillas into quarters and layer them on the bottom of the greased dish, overlapping slightly.
  4. In a large bowl, whisk together the eggs and milk. Season with salt and pepper to taste.
  5. Pour the egg mixture over the layered tortillas, ensuring they are evenly submerged.
  6. Add the diced vegetables on top of the egg mixture, distributing them evenly.
  7. Sprinkle the shredded cheese generously over the top.
Cooking
  1. Bake in the preheated oven for 30-35 minutes or until the eggs are set and the cheese is golden brown.
  2. Remove from the oven and let it cool for a few minutes before slicing and serving.

Notes

Feel free to customize the vegetables and cheese. Avoid overloading the dish with too many veggies to prevent sogginess. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
