  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini), halved or diced
  • 1/2 cup fresh basil leaves, roughly chopped
Dressing
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • Salt, to taste
  • Freshly cracked pepper, to taste

Method
 

Cooking Tortellini
  1. Begin by bringing a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions until al dente, about 2-4 minutes for fresh tortellini or 5-7 minutes for frozen.
Preparing Vegetables
  1. While the tortellini cooks, wash and halve the cherry tomatoes. Cut larger mozzarella balls into smaller, bite-sized pieces if necessary.
Combining Ingredients
  1. In a large bowl, combine the cooked tortellini, cherry tomatoes, and mozzarella. Gently fold in the chopped basil.
Dressing the Salad
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Drizzle the dressing over the salad and toss gently.
