Preparation
- If using a store-bought pie crust, lay it in a 9-inch pie dish. If making homemade, roll it out and fit it into the dish, pricking it with a fork to prevent bubbling.
- Place the sliced tomatoes into the crust, distributing them evenly. Overlap them slightly for aesthetic flair.
- In a mixing bowl, combine the shredded mozzarella, mayonnaise, Parmesan cheese, dried basil, salt, and black pepper. Stir until well incorporated.
- Spread the cheesy mixture evenly over the tomatoes in the pie dish.
- Sprinkle the chopped green onions on top for additional flavor.
- Preheat the oven to 375°F (190°C) and bake the pie for about 30-35 minutes or until golden and bubbly.
- Let the pie cool for a few minutes before slicing. Serve warm and enjoy!
Notes
For best results, allow the tomatoes to sit in a colander for about 30 minutes before layering to drain excess moisture. This will help prevent the pie from becoming soggy. To store, refrigerate leftovers in an airtight container for up to 3 days or freeze for up to 3 months before baking.
