  • 1 piece Baguette or toasted bread, sliced Use crusty bread for the best texture.
Topping Mix
  • 2 cups Fresh tomatoes, diced Use ripe tomatoes for the best flavor.
  • 1 cup Cottage cheese Can be substituted with ricotta for a creamier texture.
  • 1/4 cup Fresh basil leaves, chopped Reserve some for garnish.
  • 2 tablespoons Olive oil Used for brushing the bread and mixing into the topping.
  • 1 tablespoon Balsamic vinegar Adds a nice tang to the topping.
  • 1 clove Garlic, minced For flavor; adjust according to taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the baguette into ½-inch thick slices and arrange them on a baking sheet.
  3. Brush lightly with olive oil and toast in the oven for about 5 to 7 minutes, or until golden and crispy.
Mix the Topping
  1. In a medium bowl, combine diced tomatoes, cottage cheese, chopped basil, minced garlic, olive oil, and balsamic vinegar.
  2. Season with salt and pepper to taste and gently mix until well combined.
Assemble
  1. Once the bread is toasted, remove it from the oven and let it cool slightly.
  2. Generously spoon the tomato and cottage cheese mixture onto each slice.
Serve
  1. Arrange the bruschetta on a platter and garnish with extra basil if desired.
