Preparation
- Preheat your oven to 250°F (120°C) and line a large baking sheet with parchment paper.
- In a medium saucepan, combine the butter, brown sugar, and corn syrup. Stir over medium heat until the mixture is bubbling and combined, about 5 minutes.
- Remove the saucepan from heat and stir in the vanilla extract and baking soda; the mixture will bubble up.
- In a large bowl, add the Chex cereal (and nuts if using). Pour the hot toffee mixture over the cereal and gently stir until well coated.
- Spread the coated Chex mixture evenly onto the prepared baking sheet and bake for about 1 hour, stirring every 15 minutes.
- Once out of the oven, sprinkle chocolate chips and toffee bits over the top while the mix is still warm.
- Allow the mix to cool completely before breaking it apart and storing it in airtight containers.
Notes
For best results, store your Toffee Chex Mix in an airtight container at room temperature. It remains crunchy for up to two weeks. Avoid refrigerating to maintain texture.
