  • 1/4 cup brewed espresso or strong coffee (cooled)
  • 2 tablespoons cocoa powder For dusting.

  • 2 cookies ladyfinger cookies, crushed (optional) Add texture and flavor.
  • 2 tablespoons sugar or sweetener (to taste)
  • 1 teaspoon vanilla extract

Preparation
  1. Start by carefully slicing each Medjool date lengthwise and removing the pit without cutting all the way through.
Making the Filling
  1. In a mixing bowl, combine the mascarpone cheese, cooled espresso, sugar, and vanilla extract. Mix until smooth and creamy.
  2. If using, fold in the crushed ladyfinger cookies to incorporate the texture and flavor.
Stuffing and Serving
  1. Using a small spoon or piping bag, gently fill each date with the mascarpone mixture.
  2. Dust the filled dates with cocoa powder and sprinkle dark chocolate shavings on top.
  3. Place the stuffed dates in the refrigerator for about 30 minutes to meld the flavors before serving.

Notes

These stuffed dates can be made ahead of time and stored in an airtight container in the fridge for up to three days. Avoid freezing to preserve their texture. A dash of cinnamon can be added for extra flavor.
