Preparation
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk together until fully blended.
- Add the eggs, whole milk, vegetable oil, and vanilla extract to the dry mix. Beat everything on medium speed for about 2 minutes until well combined.
- Carefully stir in the boiling water. The mixture will look thin but this ensures a moist cake.
Baking
- Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
- Once done, cool the cakes in the pans for about 10 minutes, then remove them from the pans and allow to cool completely on a wire rack.
- Once cooled, frost with your favorite chocolate frosting or ganache, and then slice to share.
Notes
Store the cake in an airtight container at room temperature for up to three days. For longer storage, freeze wrapped pieces for up to 3 months. Reheat in the microwave for 10-15 seconds or in the oven at a low temperature.
