Ingredients
  

Pasta Ingredients
  • 8 oz pasta (elbow or rotini)
Meat Ingredients
  • 1 lb ground beef or turkey Can substitute with ground chicken or plant-based meat.
  • 1 packet taco seasoning
Vegetables and Sauces
  • 1 cup salsa Choose your favorite style.
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
Toppings
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 units green onions, chopped
  • to taste sour cream (optional for serving)

Method
 

Cooking the Pasta
  1. In a large pot, bring salted water to a boil. Add your pasta and cook according to the package instructions until al dente. Drain and set aside.
Cooking the Meat
  1. In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it into crumbles with a spatula, about 5-7 minutes.
  2. Once the meat is cooked, add the taco seasoning. Stir well to combine, then pour in the salsa and mix.
Combining Ingredients
  1. Stir in the black beans and corn. Allow everything to simmer together for about 5 minutes, letting the flavors meld.
  2. Toss the cooked pasta into the skillet with the meat mixture. Stir well to coat all of the pasta with the delicious taco mixture.
  3. Sprinkle the shredded cheese over pasta and stir until evenly melted.
Serving
  1. Remove from heat and top with chopped green onions before serving. If desired, offer sour cream on the side.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. This dish freezes well for up to 2 months. Reheat gently with a splash of water or salsa if dry.
