Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking pan.
- In a large mixing bowl, combine the pumpkin puree and vegetable oil. Whisk them together until combined.
- Mix in the sugar, followed by the eggs, one at a time, ensuring each is well incorporated before adding the next. Stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing!
- Pour the batter into the prepared baking pan, smoothing out the top with a spatula.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan before slicing and serving.
Notes
For a healthier twist, consider substituting some of the sugar with honey or maple syrup. Store leftover slices in an airtight container at room temperature for up to 3 days, or freeze wrapped securely for up to 3 months.
