  • 1 large Fresh cucumbers, thinly sliced
  • 1 cup Cream cheese, softened
  • 8 slices White bread Whole grain can be used for a healthier twist
  • to taste Salt and pepper
  • 2 tablespoons Fresh dill or chives, finely chopped Optional for flavor

Method
 

Preparation
  1. Wash your cucumbers thoroughly and slice them thinly, about 1/8 inch thick.
  2. In a medium-sized bowl, beat the softened cream cheese until smooth. If using fresh herbs, mix them in now along with salt and pepper to taste.
Assembly
  1. Lay out your slices of bread on a clean surface. Spread a generous layer of the cream cheese mixture onto one slice.
  2. Layer the cucumber slices over the cream cheese, then place another slice of bread on top.
  3. Cut the sandwiches into quarters or triangles as preferred and arrange on a platter.
Serving
  1. Serve immediately and enjoy with friends.

Notes

For a lighter alternative, consider using Greek yogurt spread or hummus. Make the sandwiches just before serving for the best texture, and store any leftovers in an airtight container for up to 1 day.
