Preparation
- Wash your cucumbers thoroughly and slice them thinly, about 1/8 inch thick.
- In a medium-sized bowl, beat the softened cream cheese until smooth. If using fresh herbs, mix them in now along with salt and pepper to taste.
Assembly
- Lay out your slices of bread on a clean surface. Spread a generous layer of the cream cheese mixture onto one slice.
- Layer the cucumber slices over the cream cheese, then place another slice of bread on top.
- Cut the sandwiches into quarters or triangles as preferred and arrange on a platter.
Serving
- Serve immediately and enjoy with friends.
Notes
For a lighter alternative, consider using Greek yogurt spread or hummus. Make the sandwiches just before serving for the best texture, and store any leftovers in an airtight container for up to 1 day.
