Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream For a lighter version, you can use Greek yogurt.
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
Streusel Topping
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1 cup chopped nuts (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream the softened butter until light and fluffy. Gradually add the sugar and continue beating until smooth. Stir in the sour cream, eggs, and vanilla extract.
Mixing and Baking
  1. Slowly add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
  2. In a separate bowl, mix the chopped nuts (if using), brown sugar, and cinnamon for the streusel topping.
  3. Spread half of the batter in a greased 9x13 inch baking pan. Sprinkle half of the streusel mixture on top, then pour the remaining batter over. Finally, sprinkle the rest of the streusel over the top.
  4. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  5. Let the cake cool for about 10-15 minutes before slicing. Serve with your favorite cup of coffee.

Notes

Store leftover coffee cake in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months. Reheat individual slices in the microwave for about 15-20 seconds.
