Preparation
- Preheat your oven to 350°F (175°C) and grease a round cake pan.
- In a large mixing bowl, combine the softened butter and granulated sugar. Beat them together until light and fluffy, usually about 3-5 minutes.
- Crack in the eggs, one at a time, mixing well after each addition. Then, add the zest of the blood oranges.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt.
- Add the yogurt (or sour cream) and blood orange juice to the butter and sugar mixture, stirring until combined.
- Gradually add the dry mixture into the wet ingredients, mixing until just combined.
Baking
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Cooling and Serving
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Dust with powdered sugar before serving.
Notes
Allow the cake to rest overnight to enhance flavor. Store in an airtight container at room temperature for 2-3 days or refrigerate for up to a week. Freeze wrapped tightly for up to 3 months.
