Ingredients
  

For the cake
  • 2 pieces blood oranges, zested and juiced
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened Make sure it’s at room temperature.
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup yogurt or sour cream Plain yogurt recommended.
  • amount powdered sugar for dusting Optional for serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. In a large mixing bowl, combine the softened butter and granulated sugar. Beat them together until light and fluffy, usually about 3-5 minutes.
  3. Crack in the eggs, one at a time, mixing well after each addition. Then, add the zest of the blood oranges.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Add the yogurt (or sour cream) and blood orange juice to the butter and sugar mixture, stirring until combined.
  6. Gradually add the dry mixture into the wet ingredients, mixing until just combined.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  2. Dust with powdered sugar before serving.

Notes

Allow the cake to rest overnight to enhance flavor. Store in an airtight container at room temperature for 2-3 days or refrigerate for up to a week. Freeze wrapped tightly for up to 3 months.
