  • 2 lbs beef short ribs Halal-friendly
  • 1/2 cup Thai sweet chili sauce
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons lime juice
  • Salt and pepper, to taste
Garnish
  • 3 scallions, chopped
  • 1 tablespoon sesame seeds

Method
 

Preparation
  1. Preheat the oven to 300°F (150°C).
  2. In a large bowl, combine the sweet chili sauce, soy sauce, minced garlic, ginger, lime juice, salt, and pepper. Add the beef short ribs and let them marinate for about 30 minutes.
Cooking
  1. Arrange the marinated ribs in a single layer on a baking sheet lined with foil. Pour leftover marinade over the ribs.
  2. Cover the baking sheet with foil and place it in the preheated oven. Bake for 2.5 to 3 hours until the ribs are tender.
  3. Once cooked, remove the foil and switch your oven to broil. Broil the ribs for 5-7 minutes for a caramelized finish; watch closely to avoid burning.
  4. Garnish with chopped scallions and sesame seeds before serving.

Notes

If you can't find beef short ribs, use beef back ribs or chicken wings. Marinate longer for more flavor and keep an eye while broiling to prevent overcooking.
