  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup red bell pepper, sliced
  • 1/2 cup green onions, chopped
  • 1/2 cup chopped cilantro
  • 1/2 cup peanuts, chopped For topping
Dressing Ingredients
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey Substitute with agave syrup for vegan option
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (optional) For added spice

Method
 

Preparation
  1. Shred the cabbage and carrots using a food processor or box grater.
  2. Slice the red bell pepper and chop the green onions and cilantro. Combine all vegetables in a large mixing bowl.
Making the Dressing
  1. In a separate bowl, whisk together peanut butter, soy sauce, honey, grated ginger, lime juice, sesame oil, and sriracha until smooth.
Combining
  1. Pour the dressing over the mixed vegetables and toss until evenly coated.
  2. Just before serving, sprinkle chopped peanuts on top.
  3. Enjoy this salad on its own or as a side dish to your favorite protein.

Notes

Prepare the dressing ahead of time for better flavor. Store leftovers in an airtight container, best eaten fresh. If using substitutes for peanuts, try sunflower or pumpkin seeds.
