  • 1 cup chopped red bell pepper
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup peanuts, chopped For topping.
Peanut Dressing
  • 1/4 cup peanut butter Smooth or crunchy, based on preference.
  • 2 tablespoons soy sauce Use low sodium for a healthier option.
  • 2 tablespoons lime juice Freshly squeezed is recommended.
  • 1 tablespoon honey Or alternative sweetener.
  • 1 teaspoon grated ginger
  • 1-2 tablespoons water Add to adjust dressing consistency.

Preparation
  1. Gather all your ingredients and chop the vegetables.
Make the Peanut Dressing
  1. In a small mixing bowl, whisk together the peanut butter, soy sauce, lime juice, honey, and grated ginger. Gradually add water until desired consistency is reached.
Combine the Salad
  1. In a large bowl, add the shredded chicken, mixed greens, shredded carrots, chopped bell pepper, cucumber, green onions, and fresh cilantro.
Dress the Salad
  1. Drizzle the peanut dressing over the salad and gently toss until all ingredients are well-coated.
Top with Peanuts
