Ingredients
  

For the Bowl
  • 1 pound ground turkey Lean source of protein
  • 1 cup rice (white or brown) Cook according to package instructions
  • 1/2 cup teriyaki sauce For drizzling over the dish
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots) Fresh or frozen
  • 2 tablespoons sesame oil For cooking
  • to taste salt and pepper For seasoning
  • for garnish green onions Optional

Method
 

Preparation
  1. Cook the rice according to the package instructions and set aside once finished.
  2. In a large skillet, heat the sesame oil over medium heat.
  3. Add the ground turkey to the pan and season with salt and pepper. Cook for about 5-7 minutes until it’s no longer pink, breaking it apart with a spatula.
  4. Stir in the mixed vegetables and cook for an additional 3-5 minutes until tender but still crisp.
  5. Pour the teriyaki sauce over the turkey and vegetable mixture, stirring well to combine. Let it simmer for 2-3 minutes.
  6. To serve, spoon the turkey mixture over a portion of rice and garnish with chopped green onions if desired.
  7. Enjoy with chopsticks or a fork.

Notes

Substitute turkey with chicken or beef if preferred. Make sure not to overcook the vegetables to avoid sogginess. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
