  • 2 large sweet potatoes Peeled and grated
  • 1/4 cup shredded cheese (cheddar or mozzarella) For topping

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to ensure even cooking.
  2. Peel and grate the sweet potatoes using a box grater or food processor.
  3. In a mixing bowl, combine the grated sweet potatoes, olive oil, salt, and pepper. Add half of the cheese and green onions, and mix until well-combined.
Forming and Baking
  1. Lightly oil a baking sheet and shape the sweet potato mixture into nests on the sheet.
  2. Bake for about 20 minutes or until the nests are golden brown and crispy around the edges.
Topping and Serving
  1. Sprinkle the remaining cheese, green onions, and optional toppings like black beans over the nests and return to the oven for an additional 5 minutes to melt the cheese.
  2. Let them cool slightly before serving as a main dish or side.

Notes

For substitutions, you can use zucchini or carrots instead of sweet potatoes. Ensure the nests have space for even baking. Store leftovers in an airtight container for up to 3 days or freeze for about a month.
