  • 8 pieces tostada shells Arrange on a platter.
  • 1 cup refried beans Heat before layering.
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 1 whole avocado, sliced
  • to taste Fresh cilantro (optional) For garnish.

Preparation
  1. Arrange the tostada shells on a large serving platter.
  2. In a small saucepan, heat the refried beans over medium heat until warm.
  3. While the beans heat, shred your rotisserie chicken into bite-sized pieces, discarding any skin or bones.
  4. On each tostada, spread a layer of warm refried beans followed by shredded rotisserie chicken.
  5. Top the chicken with shredded lettuce, diced tomatoes, and sliced avocado.
  6. Sprinkle shredded cheese over the top, followed by a dollop of sour cream and a drizzle of salsa. Garnish with fresh cilantro if desired.
  7. Serve immediately while still crisp and fresh.

Notes

Consider substituting Greek yogurt for sour cream for a lighter option. Assemble tostadas right before serving to maintain crispness. Avoid overloading to prevent sogginess.
