- Wash and scrub the potatoes thoroughly. Then, pierce them several times with a fork.
Baking
- Place the potatoes directly on the oven rack and bake for about 45 minutes or until the insides are fully cooked and soft.
- Carefully remove them from the oven and allow them to cool for a few minutes.
Filling Preparation
- Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a thin layer of potato along the skin.
- Add shredded cheddar cheese, chopped chives, butter, salt, and pepper to the potato insides. Mix until well combined.
- Spoon the mixture back into each potato skin, packing it gently.
Final Baking
- Place the filled potato skins on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes or until the tops are golden and crispy.
- Take them out and let them cool for a few minutes before serving. Enjoy!
