Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly. Then, pierce them several times with a fork.
Baking
  1. Place the potatoes directly on the oven rack and bake for about 45 minutes or until the insides are fully cooked and soft.
  2. Carefully remove them from the oven and allow them to cool for a few minutes.
Filling Preparation
  1. Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a thin layer of potato along the skin.
  2. Add shredded cheddar cheese, chopped chives, butter, salt, and pepper to the potato insides. Mix until well combined.
  3. Spoon the mixture back into each potato skin, packing it gently.
Final Baking
  1. Place the filled potato skins on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes or until the tops are golden and crispy.
