Ingredients
  

Cookie Dough
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
Toppings
  • 1 can sliced pineapple, drained (reserve juice)
  • 1/2 cup shredded coconut (optional) For a tropical touch
  • Maraschino cherries to taste for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened butter, granulated sugar, and packed brown sugar. Beat until light and fluffy.
  3. Add in the eggs, one at a time, and the vanilla extract until fully combined.
  4. In another bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
  5. Gradually add the dry mixture to the wet mixture until just combined.
Assembly
  1. Spread a thin layer of brown sugar on the bottom of each cookie.
  2. Place a pineapple ring on top and a cherry in the center if desired.
  3. Use a cookie scoop to place mounds of dough on top of the pineapple rings, gently pressing down.
Baking
  1. Place in the preheated oven and bake for 12-15 minutes or until the edges are golden and the dough is set.
  2. Allow the cookies to cool slightly on the tray before transferring them to a wire rack.

Notes

For a dairy-free option, substitute the butter with a plant-based butter alternative. If you're gluten-sensitive, try using a 1:1 gluten-free flour blend. Let your cookies cool properly to avoid them falling apart. Experiment with flavors by adding a pinch of cinnamon or nutmeg to the dough for a warm spice.
