Ingredients

Doughnut Batter
  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 1/2 cup milk (or a plant-based alternative) almond or coconut milk can be used
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
For Frying
  • as needed oil for frying
  • as needed powdered sugar for dusting (optional) for an extra touch of sweetness

Method

Preparation
  1. In a mixing bowl, whisk together the glutinous rice flour, sugar, and baking powder until combined.
  2. Gradually pour in the milk and vanilla extract, mixing until you achieve a smooth batter.
  3. In a deep pan or pot, heat oil over medium heat until it's 1-2 inches deep.
Frying
  1. Use a spoon or your hands to scoop out the batter and form doughnut shapes or simple doughnut balls.
  2. Carefully place the doughnuts into the hot oil, frying a few at a time for about 2-3 minutes on each side.
  3. Once they turn a golden brown, use a slotted spoon to drain them on a plate lined with paper towels.
  4. Dust with powdered sugar while still warm, if desired.
  5. Serve warm and enjoy!

Notes

For dairy-free options, substitute milk with any plant-based alternative. Frying time is crucial; overcooking makes them hard, undercooking leaves them doughy. Ensure oil is hot enough before frying to avoid greasy results. Cool completely before storing in an airtight container for up to 3 days in the fridge or freeze for up to a month. Reheat in the microwave for 10-15 seconds or warm oven.
