Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, blend the Greek yogurt, oil, eggs, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Avoid over-mixing; a few lumps are perfectly fine!
Baking
- Pour the batter into your prepared loaf pan and smooth out the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Once done, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Serve slices with yogurt and berries, or spread with honey or almond butter. Store wrapped or in an airtight container for up to 3 days at room temperature, or freeze for up to 3 months.
