Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar (or to taste)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup Greek yogurt (plain) Opt for full-fat for richer texture
  • 1/3 cup vegetable oil (or melted butter)
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, blend the Greek yogurt, oil, eggs, and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. Avoid over-mixing; a few lumps are perfectly fine!
Baking
  1. Pour the batter into your prepared loaf pan and smooth out the top.
  2. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Once done, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve slices with yogurt and berries, or spread with honey or almond butter. Store wrapped or in an airtight container for up to 3 days at room temperature, or freeze for up to 3 months.
