Preparation
- Start by seasoning your chicken thighs with salt and pepper.
- In a skillet over medium heat, heat the olive oil. Add chopped onions and sauté until they become translucent.
- Toss in the minced garlic and cook for another minute until fragrant.
Cooking
- Transfer the sautéed onion and garlic mixture to your crockpot.
- Place the seasoned chicken thighs on top. Pour the chicken broth, lemon juice, and lemon zest over the chicken.
- Sprinkle dried thyme and oregano all over the top.
- Cover your crockpot and let it cook on low for 6-8 hours or high for 4-5 hours.
- Once cooked, the chicken will be tender and easily fall apart.
Serving
- Garnish with fresh parsley and serve with your favorite side, like rice or veggies.
Notes
