  • 1 cup chicken broth Make sure it’s halal
  • 2 tablespoons olive oil For sautéing onions and garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste Salt

  • as needed Fresh parsley (for garnish, optional) Optional for serving

Method
 

Preparation
  1. Start by seasoning your chicken thighs with salt and pepper.
  2. In a skillet over medium heat, heat the olive oil. Add chopped onions and sauté until they become translucent.
  3. Toss in the minced garlic and cook for another minute until fragrant.
Cooking
  1. Transfer the sautéed onion and garlic mixture to your crockpot.
  2. Place the seasoned chicken thighs on top. Pour the chicken broth, lemon juice, and lemon zest over the chicken.
  3. Sprinkle dried thyme and oregano all over the top.
  4. Cover your crockpot and let it cook on low for 6-8 hours or high for 4-5 hours.
  5. Once cooked, the chicken will be tender and easily fall apart.
Serving
  1. Garnish with fresh parsley and serve with your favorite side, like rice or veggies.

Notes

Substitutions: For a healthier twist, use skinless and boneless chicken breasts. Adjust cooking time accordingly. Avoid high heat cooking for tender meat. Store leftovers in an airtight container for up to 3-4 days or freeze for up to 3 months.
