Preparation
- Season the chicken breasts with salt, pepper, and oregano.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chicken breasts and sear for about 5-6 minutes on each side until golden brown. Remove from the skillet and set aside.
Cooking
- In the same skillet, add minced garlic and cook for about a minute until fragrant.
- Add the fresh spinach and sauté until wilted.
- Return the chicken breasts to the skillet and sprinkle cbled feta cheese over them.
- Cover and cook for another 3-5 minutes, allowing the cheese to melt and the chicken to finish cooking.
Serving
- Once the chicken is fully cooked (internal temperature reaches 165°F), serve warm, optionally paired with whole grains or a fresh salad.
Notes
For extra flavor, consider marinating the chicken in olive oil, garlic, and herbs for an hour before cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
