Method
Marination
- In a large bowl, combine the yogurt, tandoori spice mix, salt, and pepper. Add the chicken pieces, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
Prepare Garlic Butter
- In a separate bowl, mix melted butter with minced garlic. Set aside.
Preheat the Oven
- Preheat your oven to 400°F (200°C) so it's ready when you are.
Cook the Chicken
- In a skillet over medium heat, cook the marinated chicken until cooked through and slightly charred, which should take about 7-10 minutes.
Prepare the Bread
- Slice your chosen bread in half and brush both pieces with the garlic butter mixture.
Assemble the Bread
- Place the cooked chicken evenly over the bread halves.
Bake
- Place the topped bread in the oven and bake for 8-10 minutes or until the edges are crispy and the chicken is heated through.
Serve
- Remove from the oven, garnish with fresh cilantro, slice, and enjoy!
Notes
Best enjoyed fresh but leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the oven for best results.
