Ingredients
  

For the Tandoori Chicken
  • 2 pieces boneless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons tandoori spice mix Adjust according to spice preference
  • Salt and pepper Salt and pepper to taste
For the Garlic Butter
  • 4 cloves garlic, minced
  • 2 tablespoons butter, melted
For Assembly
  • 1 cup bread (any preferred type, such as baguette or ciabatta) Choose a crusty loaf
  • Fresh cilantro Fresh cilantro for garnish Optional, for garnish

Method
 

Marination
  1. In a large bowl, combine the yogurt, tandoori spice mix, salt, and pepper. Add the chicken pieces, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
Prepare Garlic Butter
  1. In a separate bowl, mix melted butter with minced garlic. Set aside.
Preheat the Oven
  1. Preheat your oven to 400°F (200°C) so it's ready when you are.
Cook the Chicken
  1. In a skillet over medium heat, cook the marinated chicken until cooked through and slightly charred, which should take about 7-10 minutes.
Prepare the Bread
  1. Slice your chosen bread in half and brush both pieces with the garlic butter mixture.
Assemble the Bread
  1. Place the cooked chicken evenly over the bread halves.
Bake
  1. Place the topped bread in the oven and bake for 8-10 minutes or until the edges are crispy and the chicken is heated through.
Serve
  1. Remove from the oven, garnish with fresh cilantro, slice, and enjoy!

Notes

Best enjoyed fresh but leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the oven for best results.
