Ingredients
  

Tahini Dressing
  • 1/2 cup tahini (smooth and creamy)
  • 1/4 cup fresh lemon juice (about 1-2 lemons)
  • 2 cloves garlic (minced; adjust to taste)
  • 3 tablespoons olive oil (extra virgin for best flavor)
  • 1/2 teaspoon salt (or to taste)
  • 2-4 tablespoons water (to achieve desired consistency)
Mixed Vegetables
  • 1 cup cucumber (diced)
  • 1 piece bell pepper (any color, diced)
  • 1-2 pieces carrots (shredded or sliced)

Method
 

Preparation
  1. In a medium bowl, combine the tahini, lemon juice, minced garlic, olive oil, and salt. Whisk the mixture until smooth.
  2. If the tahini dressing appears too thick, slowly add water—one tablespoon at a time—until you reach your desired creaminess.
Tossing
  1. In a large bowl, add the diced cucumber, bell pepper, and shredded carrots.
  2. Pour the prepared tahini dressing over the vegetable mix. Gently toss until all the veggies are well-coated in the creamy goodness.
Serving
  1. Taste and adjust seasoning. If it needs more tartness, add a splash more lemon juice.
  2. Serve immediately or let it chill for about 30 minutes to allow the flavors to meld.
  3. This salad can be served on a bed of greens, as a dip with pita bread, or alongside grilled chicken for a complete meal.

Notes

Experiment with different veggies, adjust the thickness to your liking, and try enhancing with toppings like sesame seeds or fresh herbs. Serve soon after tossing to avoid wilted vegetables.
