  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa (mild, medium, or hot depending on preference)
  • 1 cup shredded cheese (cheddar or Mexican blend)

Method
 

Cooking Rice
  1. Begin by cooking the rice according to package instructions. Typically, this involves rinsing, boiling water, and simmering until tender, which takes about 15-20 minutes.
Preparing Meat
  1. While your rice cooks, heat a non-stick skillet over medium heat. Add the ground beef or turkey, breaking it apart with a spoon. Cook until browned, about 6-8 minutes.
  2. Sprinkle the taco seasoning over the meat, stirring to incorporate. Add 1/4 cup of water and simmer for another 2-3 minutes until the meat is fully cooked and well-seasoned.
Combining Ingredients
  1. In a large bowl, mix the cooked rice, seasoned meat, drained black beans, corn, and 1/2 cup of salsa. Stir to combine everything evenly.
Assembling the Bowl
  1. In serving bowls, place a generous portion of the taco rice mixture. Top each serving with shredded cheese, remaining salsa, and your choice of toppings like sour cream, avocado, lettuce, and diced tomatoes.

Notes
