Cooking Steps
- Cook the rice according to the package instructions. Once done, set aside and fluff with a fork to keep it light and airy.
- In a large skillet over medium heat, add the ground beef or turkey. Cook until fully browned, about 5-7 minutes. Break it up as it cooks for even browning.
- Once the meat is browned, add the taco seasoning and a splash of water to the skillet. Stir thoroughly, letting it simmer for about 2 minutes.
- Add the rinsed black beans, corn, and diced tomatoes to the skillet. Stir until heated through, about 5 minutes.
- Layer the cooked rice at the bottom of serving bowls, followed by the meat mixture. Top with shredded cheese, lettuce, sour cream, and salsa.
