  • 1 cup rice (any variety like jasmine or basmati)
  • 1 pound ground beef or turkey (ensure it’s halal)
  • 1 packet taco seasoning Check labels for halal compliance
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded cheese (like cheddar or Monterey Jack)
  • to taste lettuce, chopped (for topping)
  • to taste sour cream (optional, for creaminess)
  • to taste salsa (your favorite kind)

Cooking Steps
  1. Cook the rice according to the package instructions. Once done, set aside and fluff with a fork to keep it light and airy.
  2. In a large skillet over medium heat, add the ground beef or turkey. Cook until fully browned, about 5-7 minutes. Break it up as it cooks for even browning.
  3. Once the meat is browned, add the taco seasoning and a splash of water to the skillet. Stir thoroughly, letting it simmer for about 2 minutes.
  4. Add the rinsed black beans, corn, and diced tomatoes to the skillet. Stir until heated through, about 5 minutes.
  5. Layer the cooked rice at the bottom of serving bowls, followed by the meat mixture. Top with shredded cheese, lettuce, sour cream, and salsa.
  6. Serve and enjoy the explosion of flavors!

Notes

You can swap the ground beef for chicken or a plant-based alternative. For a healthier twist, substitute rice with quinoa. If you have leftovers, store in an airtight container for up to 3 days, or freeze components separately for up to 2 months.
