Preparation
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, cook your ground meat until it is browned and fully cooked through, about 7-10 minutes. Drain any excess fat.
- Stir in the taco seasoning and 1/2 cup of ranch dressing to the cooked meat, mixing everything well. Allow it to simmer for another 2-3 minutes.
- Warm the tortillas slightly in a microwave for about 30 seconds to make them easier to roll.
Assembly and Baking
- Spoon about 2-3 tablespoons of the meat mixture into each tortilla and sprinkle with cheese.
- Roll them up tightly, folding in the sides.
- Place the rolled tortillas seam side down on a greased baking sheet, and spray the tops lightly with cooking spray.
- Bake in the preheated oven for 15-20 minutes or until crispy and golden.
Serving
- Remove from the oven, let cool for a few minutes, and serve with your favorite dipping sauces.
Notes
For lighter options, consider using lean ground turkey or chickpeas for a vegetarian alternative. Avoid overfilling tortillas to prevent busting seams. Store leftovers in an airtight container for up to three days, or freeze un-baked assembled bites for later.
