Preparation
- Preheat your oven to 180°C (350°F).
- In a skillet over medium heat, cook the chopped onion until soft. Add the ground beef and cook until browned, ensuring it's well-seasoned.
- While the beef cooks, warm the flour tortillas on a separate skillet or in the microwave for a few seconds.
- On each tortilla, spread a layer of refried beans, add a portion of the cooked beef, and sprinkle with shredded cheese.
- Carefully roll each tortilla tightly to form your enchiritos.
- Place the rolled enchiritos in a baking dish, pour the enchilada sauce over the top, and sprinkle with any remaining cheese.
- Bake in the preheated oven for about 20 minutes or until the cheese is melted and bubbly.
- Once out of the oven, serve hot and garnish with sour cream if desired.
