  • 6 large large flour tortillas
  • 500 g ground beef, seasoned
  • 400 g refried beans (canned)
  • 200 g shredded cheese (e.g., cheddar or a Mexican cheese blend)
  • 250 ml enchilada sauce
  • 1 small onion, finely chopped
  • 150 g sour cream, for serving

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. In a skillet over medium heat, cook the chopped onion until soft. Add the ground beef and cook until browned, ensuring it's well-seasoned.
  3. While the beef cooks, warm the flour tortillas on a separate skillet or in the microwave for a few seconds.
  4. On each tortilla, spread a layer of refried beans, add a portion of the cooked beef, and sprinkle with shredded cheese.
  5. Carefully roll each tortilla tightly to form your enchiritos.
  6. Place the rolled enchiritos in a baking dish, pour the enchilada sauce over the top, and sprinkle with any remaining cheese.
  7. Bake in the preheated oven for about 20 minutes or until the cheese is melted and bubbly.
  8. Once out of the oven, serve hot and garnish with sour cream if desired.

Notes

Ensure all your ingredients are Halal-certified. Prepare your enchilada sauce ahead of time to save on cooking.
