Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the flour and sugar. Mix in the softened butter until the mixture resembles coarse crumbs.
- Press this mixture evenly into the bottom of a greased 8-inch square baking dish.
- Bake the crust in the oven for about 15 minutes, or until lightly golden.
- In a medium bowl, combine the chopped rhubarb, sugar, cornstarch, vanilla extract, and eggs. Mix well until smooth.
- Remove the crust from the oven and pour the rhubarb mixture evenly over the hot crust.
- Return the dish to the oven and bake for an additional 25-30 minutes until the filling is set and the top is slightly firm.
- Allow your bars to cool completely in the dish.
- In a small bowl, mix powdered sugar and lemon juice to create the frosting. Drizzle over the cooled bars.
- Once frosted, cut into bars and serve!
Notes
If you’re out of fresh rhubarb, feel free to experiment with another tart fruit, like strawberries or cherries! Make sure to let the bars cool completely before cutting—this will help them hold their shape.
